Boston Butt Bites

These were a HUGE hit at Rebekah’s arTWOstic birthday party!

I had been wanting to try this recipe for awhile and figured it would be a great time.

Boston Butt Bites

Savory and juicy pork bites to keep faces and hands cleaner (mostly) and make for a great party entree.

Ingredients

  • 2 - Disposable aluminum pans
  • Aluminum foil
  • 1 - 4 lb pork Boston butt
  • BBQ rub
  • Butter
  • Honey Mustard
  • Brown sugar
  • Honey
  • BBQ sauce
  • Grill/smoker

Instructions

  1. We preheated the smoker to 250 degrees (Fahrenheit)
  2. While it was preheating, I removed the bone from the Boston butt (it was roughly 4 lbs before removing the bone) and there wasn't much fat on it so I didn't trim any but if you have excess fat that you would want to, trim it now.
  3. After I removed the bone, I placed the Boston butt in one of the aluminum pans and covered it in a dry BBQ seasoning on all sides. Once coated with the dry rub I then added Honey Mustard. I smeared the honey mustard on top of the dry rub and then added more dry rub.
  4. I then smoked it for about 3-3:30 hours (you want it to hit 160 degrees Fahrenheit on the inside)
  5. After it reached 160 degrees internal I brought the pan and meat inside and cut it into 1 inch by 1 inch cubes, roughly. As I cut the meat into cubes I placed them into the other aluminum pan.
  6. Once I cut up the entire Boston butt I then poured about 3/4 of the juice from the pan that the meat had been cooked in on top of the cubed meat.
  7. On top of that I place about 5 tsp of butter on top and then poured honey over.
  8. After pouring the honey I then poured the BBQ sauce and then sprinkled brown sugar on top of the BBQ sauce.
  9. Wrap the pan with the 'bites' in it with aluminum foil and then smoke it for another hour.
  10. After the hour remove the foil from the pan and stir the meat and juices up, You will then pour the juices out of the pan that the 'bites' are in, into the prior pan.
  11. Add more BBQ sauce on top of the 'bites' and place back into the smoker (without the aluminum foil on top) for another 30 minutes at 300 degrees Fahrenheit to help caramelize the BBQ sauce that you just poured in.
  12. Remove from smoker - stir & enjoy your bite sized BBQ Boston Butt Bites!

    1. Thanks Peter! Thank you for all your help at the birthday party after the grill caught fire! LOL! I figured people might want to know the recipe after it was gone so quickly – I wasn’t even able to get a picture of the finished product that day. OOPS!
